It’s summer and that means that almost everything in our household gets made on the barbecue. There’s nothing better than doing 15 minutes of prep inside and then moving out to the patio and just sitting and relaxing outside while cooking up your dinner. Well, I don’t think there’s much better. It really is the little things sometimes.
I know, I know, I know… I said I was back on track and then I went a week without putting up a post. It is so hard to get back into a routine once you’ve let it slide. I feel like a broken record but I really am (mostly) back on track now and I actually have A LOT of projects lined up. I’ve been going to yard sales (my favourite!) and I have lots of stuff to show you so please keep posted! Now, all that aside, I’ve also been whipping up some to-die-for recipes (and they’re healthy!) that you are going to love. This just so happens to be one of my recent favourites.
Last night I decided to reorganize my whole kitchen. I went grocery shopping and came to the shocking realization that nothing in my kitchen was in the right place and I HAD to reorganize it. I switched up my whole pantry, cleaned out my fridge and my freezer, the whole nine yards. Afterwards, when everything was finally in its place, I still had to make dinner and I promised myself that I wouldn’t order a pizza (have I mentioned how much I LOVE pizza?). So I made this. It’s easy, it’s healthy and it’s delicious. Make it tonight.
This was the best decision I’ve made in a long time. I made the biggest pasta bake and it was so delicious that I really didn’t mind having it for dinner three nights in a row. You know what that means? That means I didn’t have to cook at all two nights this week. That’s a big deal. Not that cooking is a huge hardship but it’s nice to know that there is a well rounded homemade meal waiting for you when you get home and all you have to do is heat it up.

Howdy there! I know I’ve done a couple versions of healthy muffins but these ones are the easiest. I honestly threw this together after work last night and was done with the whole thing in 30 minutes. That’s the time frame that I like. And these are pretty darn delicious and they’re healthy. Win, win, win!
Is there anything better than going to sleep on Sunday night knowing that the lunches for the week are made and ready to go? Probably, but not much. It’s such a weight to be lifted off your shoulders what with everything else that life throws at you. I’ve gotten into the habit of doing it and when I don’t have time on Sunday to do it, it really does throw off my week. So, I’ve wrangled up some of my favourite go to recipes for you.

Looking for something healthy and delicious for dinner tonight? You’ve come to the right place. I’ve been experimenting with salads lately and I must say that this one is certainly a winner. Salads are so versatile, you can throw a couple ingredients together, add some lettuce and you’re done. The problem I have is that I have an insatiable appetite and salads just don’t do it for me. I’ll have a gigantic serving, feel really good about all the healthy choices I’m making and then hear my stomach rumbling 15 minutes later. I can almost hear it’s muffled cries for pizza. Not with this salad, though! The chickpeas and the eggs are very filling and it’s delicious to boot. You won’t be feeling anything but satisfied after eating this one.
